We have a local restaurant that attempts to waffle all the things.  They are usually quite successful too.  I had a spinach & chorizo waffle topped with sunny-side-up eggs there the other day.  It was delicious.

Pro tip: toss some cinnamon buns in the waffle iron. That’s my fav thing to do for breakfast besides making the classic waffles.
